THUMBPRINT COOKIES
An heirloom recipe from Dorothy Eleanor Miller (1934-2007)Apple, grape, strawberry or other favorite jelly or preserves
4 cups flour, unsifted
1 pound of butter (or reduced calorie margarine)
1 cup table sugar
1 egg yolkCombine butter and sugar.
Add egg yolk and flour.
Roll into balls about 3/4-1 inch in diameter.
Press your thumb in the middle of the cookie to make a space for the jelly.
Add the jelly or preserve of your choice to the thumbprint.
Bake at 300 degrees Fahrenheit until slightly brown around the edges.
Cover cookies and let cool on paper towels until cookies reach room temperature.
