SOFT CARROT RAISIN COOKIES
An original from Donna's Kitchen and a Las Madres favoriteMargarine, 3/4 cup
Sugar, 3/4 cup
Carrot, raw, grated, 1 cup
Egg, 1
Orange juice, 1/4 cup
Orange peel, grated, 2 teaspoons
Vanilla extract, 1/2 teaspoon
Flour, unsifted, 2 1/4 cups
Baking powder, double-acting, 2 teaspoons
Salt, 1/2 teaspoon
Raisins, seedless, 1/2 cupPre-heat oven to 375 degrees Fahrenheit. Cream butter and sugar until light and fluffy. Add carrot, egg, orange juice, orange peel and vanilla extract. Mix thoroughly. Combine flour, baking powder, salt. Gradually add carrot mixture. Blend well. Fold in raisins. Drop onto greased cookie sheet, using a tablespoon, approximately 2 inches apart. Bake until golden, approximately 10-12 minutes. Cool on a wire rack.
Yield: about 24 cookies
