HERBED WILD RICE
1/2 cup unsalted butter
2 Tbs. minced green onion
2 cloves garlic, minced
1 cup wild rice
2 bay leaves (Turkish)
1 tsp. chopped, fresh thyme
1 tsp. chopped, fresh basil
1 tsp. chopped, fresh marjoram
3 cups chicken stock
salt, pepper to tasteMelt butter in heavy 2 qt saucepan. Sauté onion, garlic & wild rice, stirring constantly until onion is limp, about 3 minutes. Add bay, thyme, basil, marjoram and stock. Bring to a boil, reduce heat to maintain simmer, cover and cook about an hour, or until rice is tender. Remove and discard bay leaves. Fluff rice with fork and cook, uncovered, until any excess moisture is evaporated.
Serves 6 - 8.
