Sam's Barbecue Award Winning Chili
Sam's Barbecue, Campbell and San Jose, California

3 lb. Skirt Steak (or Flank Steak) cubed 3/4"
1 15 oz. can tomato sauce
8 oz. water
1 bottle beer (not a dark beer)
3 oz. olive oil
1 lb. yellow onions diced fine
6 cloves garlic diced fine
10 oz. green chiles diced fine
2 tablespoons ground cumin
3 tablespoons New Mexico chili powder
2 tablespoons salt
1 teaspoon black pepper
2 teaspoon cayenne pepper

Brown meat in oil and set aside. Brown onions and garlic and oil in pot. Add tomato sauce, water, beer, and green chiles to pot and simmer 20 minutes on medium heat. Add beef and simmer 20 minutes on medium heat. Add spices and simmer for 1 1/2 hours, stirring occasionally. Add more water if needed. Add extra salt and cayenne to taste.
